Sugar Beet Pectin

SBP (Sugar beet pectin) is well known as good emulsifier due to presence of protein and ferulic acids. SBP plays a key role as an emulsifying agent since protein and ferulic acids give hydrophobic properties adsorbing on to the oil droplets and carbohydrate impart as stabilizer increasing the viscosity in the aqueous phase. It has been known that covalently cross-linked polymers showed improved functionality and they are more stable over a wide range of pH, ionic strength, heat, proteolysis and other process conditions.
